Abstract
Much research has been made about fatty acids and their derivatives, and their technologies have been widely applied to many industrial fields. Fatty acids and their derivatives are regarded as basic ingredient of many in cosmetics & toiletries formulations. At the same time, N-acylamino acids, derived from amino acids and fatty acids, have come to be used these days. N-acylamino acid characteristics are totally different from fatty acid salts. These differences are caused by their unique structure, such as side chain of amino acid, chiral carbon atom and an amide linkage. These tendencies are observed on N-acylamino acid esters too. In study the unique properties of amino acid derivatives has been discussed.
