Abstract
Emulsifiers (fat based) are produced by reacting fatty acids or oil/fat with other types of raw materials. Emulsifiers have specific properties, which enable them to improve food products in various ways. The most commonly used emulsifiers are mono-diglycerides or monoglycerides. The use of emulsifiers is restricted by regulation. The worldwide market of fat based emulsifiers is estimated to be 300,000 - 400,000 MT/y. There are several drivers and challenges for the emulsifier industry. The outlook for the industry says that it is likely for the industry to consolidate, also that there will be continued attention on food safety, more specific requirements to be fulfilled and more focus on the environment.
