Abstract
A formulated versatile dodol premix has coconut milk powder as one of the main ingredients. Other ingredients included in the homogenous mixture are modified glutinous-rice flour mixture sugar salt and permitted food colourings. The premix is ready-to-use thus a convenience formulation to both entrepreneurs and consumers. It is convenient as the fresh dodol with excellent quality can be prepared within minutes using kitchen microwave oven. The time to prepare and cook the dodol takes less than half the time compared to the traditional way which takes about 6-8 hours just to produce 40 kg product. Packed either in high density polyethylene bags or paper/aluminium/polyethylene bags the premix can withstand room temperature storage with shelf-life of not less than 6 months. This paper will discuss on the formulation processing nutritional composition utilization acceptability and shelf-life of the versatile dodol premix.
