Abstract

The current study was conducted to assess meat qualities of Hanwoo cows with various degree of maturity and carcass quality with emphasis on older cows eg older than 60 months. A total of 40 cows were sampled from commercial slaughterhouses and objective and subjective meat qualities were compared between degree of maturity and carcass quality grades. The results indicated that meat quality of cows differed more greatly between carcass quality grades than those between degrees of maturity. Old Hanwoo cows maturity No.8-No.9 graded as 1 quality grade had no significant differences in meat quality compared to young cows. However old cows had lower fattening and they had significantly lower meat quality than young cows. The current results indicated that eating quality of cow depended on feeding regime. It is suggested that old cows could have more superior eating quality to younger ones provided they are fed properly.
