Abstract
This paper discusses a survey of the fermentation and drying techniques employed by large-scale producers as well as small-holders. Large-scale producers have consistently strived to improve the quality of their cocoa beans. Small-holders on the other hand have paid little attention in this direction except where MARDI Malaysian Agricultural Research and Development Institute assistance and consultancy services have been made available. This survey has revealed great many variations from one fermentary to another in postharvest processing techniques in particular site and period of breaking-open the cocoa pods modes of transportation containers for transportation dimensions and types of fermentation boxes period of fermentation drying regimes and practices period of drying winnowing and storage. A brief account of these differences and their effect on the final quality of the cocoa beans is reviewed. Suggestions are presented to improve the quality and upgrade the status of Malaysian cocoa beans.
