Abstract
Oxalic acid is one of the organic acids that are found in starfruit Averrhoa carambola L. and this acid in reaction with calcium will form calcium oxalate. Excessive intake of calcium oxalate will interfere with calcium absorption in the digestive tract calcium availability from other sources and increases risk of occurrence of stone in the kidney. In a study conducted at MARDI Kluang Johor oxalic acid concentration was analysed in 49 accessions of starfruit germplasm at 50 fruit maturity using High Performance Liquid Chromatography HPLC. Oxalic acid concentration ranged between 0.085 gm MAVE 15 to 0.237 gm MAVE 44 oxalic acid/100 gm of starfruit juice.
