Abstract

Fresh pineapples were stored under controlled atmospheres consisted of 1.3 0.022 5.4 or 21 of 02 with 0 in 11.2 C02 balanced with nitrogen. After 3 Veeks of storage at SoC the fruits were transferred to air at 20C for 5 days. The internal browningIB was scored by rating from 0 none to at 5 maximum. The flesh was analysed for brix titratable acidity vitamin C ana pH. Development of m was least at 2.2 02 but higest at 5.4 02. C02 played no role in m development. At low 02 levels plus elevated C02 the brix and titratable acidity were relatively low pH was clearly affected by elevated C02. Ascorbic acid was significantly higher in pineapple stored under the controlled atmosphere condition.
