Abstract

The fruit development and maturation of sapodilla cv. Subang were determined from the flower opening to the fruit maturation which took 7-9 months to mature. The fruit development was observed throughout the period and fruit weights remained constant from 7 months onwards. The fruit colour was observed to change thereafter. Physical characteristics and chemical characteristics were determined on mature fruits. Sensory evaluation was also determined.
