Abstract

A study to evaluate the changes in the compositions of strawberry fruits grown on rockwool at three levels of NaCI ECs: 2.5 5.7 and 8.5 mS em-I was conducted. Fruits generated were analyzed for the concentrations of dry matter reducing sugars and titratable acidity. Fruit firmness and colour were measured and a sensory evaluation test was performed. Results of the study showed that fruit dry matter content reducing sugars and titratable acids per unit weight of fresh fruit were increased with EC. No changes in fruit colour and firmness were attributable to EC. Fruits produced at the lowest EC level were more attractive while fruits produced at the highest Ee were perceived as tastier and preferred.
