Abstract
This study was carried out to determine the suitable shipment and storage temperature of pineapple fruits summer. autumn and winter fruits . To measure the respiration rates. pineapple fruits were store at 5C to 40C. Temperature and respiration rate were plotted to produce Arrehenius curves to determine the temperature dependencies of respiration rates of pineapple fruits. Afterwards then pineapple fruits were stored at three different temperatures to evaluate their Quality during the storage. The result showed that alow temperature storage is suited to maintain the Quality of pineapples. In addition. the suitable storage temperature differs according to harvest seasons. It was found that 5C for summer fruits. 8C for autumn fruits. and 10C for winter fruits were the best storage temperature to keep their freshness.
