Abstract

Banana Musa paradisiaca is one of the major tropical fruits. In India it is cultivated on about 0.4 million hectare with total production of about 8 million tonnes. It is consumed directly as raw ripe fruit or processed into pulp-liquid fruit canned slice deerfried chips toffees fruit bars brandy etc. Indigenous as well as imported technology for large scale processing of banana is available for pulping canning fermentation toffee and fruit bar making. Deep fried chips of raw as well as ripe banana are popular snack foods. The banana chips are made by conventional method of manual slicing over a wooden platform and immediately frying the chips. The method is cumbersome unhygienic and does not produce chips of uniform thickness. Besides it may inflict injury to the operator while slicing. An attempt has been made to develop an electrically operated rotary slicer for raw banana. It has a capacity of slicing 61 kg peeled banana per hour with efficiency of 90 which is two times higher than the capacity achieved by conventional method. It produces chips of uniform thickness 1.5 to 2.0 mm with roundness index of 0.85.
