Abstract
The Department of Agriculture Research Branch began research to exploit the potential of the various indigenous fruit and vegetable in 1993. Terong Dayak Solanum lasiocarpum is a fruit vegetable grown especially by the hill padi farmers was identified as one of the indigenous fruit could vegetables with potential. Traditionally the only way to utilize terong Dayak is to consume it as being a seasoning to dishes. Research was conducted to develop products from terong Dayak for its development in the food industries. Various processed products were developed via terong Dayak juice fruit rolls soft candy dehydrated slices sweetened preserve and powder. Sensory evaluation of the terong Dayak fruit roll indicated high degree of acceptance by taste panel with a hedonic ranking of 8.3. This paper discussed some nutritional qualities of terong Dayak fruit roll with various packaging materials during its storage. The most suitable material for packing terong Dayak fruit roll is PP 0.06 mm ;rice paper; for a storage life of at least 12 months.
