Abstract

Effects of dietary supplementation of Ca-salt of fatty acid CSFA from palm oil on meat quality in growing lambs were examined. Eighteen Santa Ines lambs were randomly divided to 3 groups of dietary treatment 6 animals in each group. Each group was assigned to a 4 month feeding trial with Ca-salt of fatty acid CSFA added to the basal diet at either 5 2.5 or 0 as control. Shear force was lowered p0.05 while cooking loss was significantly higher p0.05 in the samples taken from lambs supplemented with 5 CSFA. However carcass dressing percentage carcass composition and pH change over 48 hrs postmortem remained unaffected by any of the dietary treatments.
