Abstract
Application of ascorbic acid 0.5 and 1 was evaluated to the minimally processed pineapple. Observing was based on the physical and chemical changes during 6 days storage at 10C. Sensory evaluation was conducted to relate with the product acceptability. Total count was measured to relate on the safety aspect. Minimally processed pineapple treated with 0.5 appeared to be more accepted compared to the control and samples treated with 1. Microbial load was reduced by the application of ascorbic acid which was pronounced at the early storage period.
