Abstract
In this paper the selection of potential amylolytic lactic acid ALAB bacteria isolated from rice bran fermentation for inhibiting bacteria such as Listeria monocytogenes Bacillus cereus Salmonella typhimurium Escherichia coli Staphylococcus aureus and S. camosus is presented. A total of 224 strains of lactic acid bacteria identified by molecular method were screened for their amylolytic activity by plate assay. Ten of the ALAB strains were selected and their culture supernatant was checked for antagonistic activity against indicator strains by using an agar diffusion assay. Based on the inhibition zones on the agar plates all strains of ALAB used in the present study produced a antagonistic activity against L. monocytogenes except strains of RB7. The difference of inhibitory activity might be caused by dissociated and undissociated acid or some unknown substances such as bacteriocins and further research is needed to investigate.
