Abstract

This paper discusses the antibacterial mechanisms of organic acids and their roles in animal production. In general the mode of action of organic acids can be based on principles namely a the destruction of the ;proton motive force; inside the cell b the disruptive effect of the anion c the effect on the cell caused by the H outside the cell and d the synergistic effects among organic acids. The application of acidifiers in diets for the young weaned pig and extensions of this practice in pig production showing the improvement in pig health and performance are discussed. The poultry industry is also an important area in which organic acid application can be effective in particular for Salmonella control. Application of acidifiers is currently being explored for water treatment programme to help ensure water hygiene and to assist in bird performance and Salmonella control.
