Abstract

In the meat processing industry many chemical additives fillers binders colours flavours various spices and herbs have been incorporated into the production of many types of processed meat products. Many of these products are readily available in supermarkets and retail outlets in the ASEAN region. Salt phosphate nitrates nitrites benzole acid sorbic acid colours and flavours were found in some of the locally manufactured meat products. In Singapore many of the Chinese sausages and some snack meat products contained high levels of salt 2-4 sugar Chinese wine 0.5-3.0 nitrate/nitrite formulation. Spices and herbs were added up to 5-9.5 in some products found in Thailand. Carbohydrate content ranging from 2-30 were found in some of the meat products from Malaysia Philippines and Indonesia.
