Abstract

A series of studies involving a total of 335 students at Universiti Pertanian Malaysia Serdang were undertaken to assess their nutritional knowledge and practices. Data were collected using questionnaires pertaining to the students socio economic background nutritional knowledge and practices including their eating habits and perceptions of the food systems at the residential colleges. Findings of the studies showed that the students had a good level of nutritional knowledge. Two variables found to relate significantly to nutritional knowledge were sex and having had an Home Economics course while in school p 0.05. Female students reported having a higher score for nutritional knowledge than males. However nutritional knowledge was found to be an correlated to nutritional practices. Perceptions of students on the services provided by the residence hall food systems pertaning to the food quality portion sizes sanitation and food service were rated as satisfactory. The iron and ascorbic acid content of the diets based on the serving portions were high the iron content ranged from 32.4 mg to 56.9 mg per day while the ascorbic acid in the diets vary from 50.9 mg to 75.4 mg per day. But in an analysis based on the actual food portions consumed by a sample of female students it was found the intake of iron and ascorbic acid by all the subjects was less than the recommended levels of 28 mg/day for iron and 30 mg/day for ascorbic acid
