Abstract
Polygalacturonase PGase activity was examined at various stages of ripening of starfruit Averrhoa carambola L.. The activity was found to increase as ripening progressed. The highest activity was observed in fruits that were classified as fully ripe. There was an inverse correlation between PGase activity and the firmness of the fruits. For all of the fruits studied the pH optimum was found to be 5.2 regardless of the stage of ripeness
