Abstract
Fruit and vegetables are two main commodities in the diet of man. Many food products have been developed from these commodities such as jams jellies chutney sauces and others. Presently Malaysia is still a net importer of fresh fruits which indicates the inability of the country to produce enough fruits for local consumption. However with the country's interest in general fruit processing and development of the food products the trend has been to upgrade fruit growing from the present subsistence level to a more profit oriented plantation scale. The Government of Malaysia has identified sixteen fruit types and numerous vegetables to be grown on a commercial basis. Research has gone into upgrading fruit and vegetable growing by combining breeding and proper agronomic practices to meet the needs. Technological advancements in the postharvest area have made it possible to preserve fresh fruits and vegetables for longer periods so that they can reach a wider population of consumers. Processing innovations have also created new products such as freeze-dried ready to eat fruits and dehydrated fruit powders which retain most of the goodness of the fresh fruit juices. The advancement in machineries has not only improved the overall quality of traditional products like jam jellies and sauces but also reduced production cost.
