Abstract

Microwave MV technology is best known for its application in domestic ovens for rapid heating of consumer foods but is being widely used in the food industry for industrial food processing as well as domestic and commercial food preparation. In Malaysia only about 1 percent of households account for the 30 000 units in use but sales in 1989 alone were 14 000-20 000 units the lower estimate being from commercial sources and the upper one from government sources. The sales level has since declined because of adverse inaccurate publicity about safety but the potential can be gauged from the estimate that 30 percent of Singapore households now have a MV oven. Singapore also has many more of the larger faster heating commercial ovens used by hotels restaurants and catering services. The commercial ovens are generally 1400 watts compared to 750 watts for the domestic models. Overseas there has been an exponential growth in the usage of domestic microwave ovens reaching about 60 percents in Australia 50 percent in the UK and over 75 percent in the USA Table 1. This has led to hundreds for new microwavable retail food products. As a result new packaging technologies new labelling and new formualtions of food products have required considerable input from food technologists
