Abstract
The role of the food engineer has emerged as a distinctive unit in the overall operation of a food processing plant. His multidisciplinary role covers all aspects of food production from the thermophysical properties of the food to the equipment used to process and package it. Several recent developments in food engineering highlighted in this paper are food drying food packaging and process control. Within these broad subject areas several aspects of current research are discussed
