Abstract

Binagol an aroid-based food product was developed and evaluated. Its shelf life was determined as affected by the types of packaging materials addition of lemon juice to lower the pH potassium sorbate and/or natamycin. Cocoyam Xanthosoma spp. and taro Colocasia esculenta were the aroids found suitable substitutes for giant taro Colocasia macrorrhiza as raw material for binagol making. The products were found to have a shelf life of three days especially with cellophane and tin foil as packaging and lining materials with coco shell as the container. Shelflife studies on taro showed 2 days as its shelf life which was increased to 15 and 21 days in the presence of potassium sorbate when its pH was increased to 5.5 and 5.0 respectively by adding lemon juice. Synergistic effect of potassium sorbate and natamycin on mold growth and aflatoxin production were also observed
