Abstract
Strains of yeast are important in food microbiology in a variety of ways. Yarrowia lipolytica is a filamentous yeast which is not able to ferment sugars. Saccharomycopsis fibuligera is also filamentous and is capable of alcoholic fermentation. These yeasts are able to produce proteases. Yarrowia lipolytica produces lipase. Saccharomycopsis fibuligera produces amylases. We produced intergeneric hybrids betweeen Yarrowia lipolytica and Saccharomycopsis fibuligera. The hybrids are able to grow on media with starch. They are unstable mitotically and give mitotic segregants. Mitotic segregants of value to the food production industries may be obtained from the hybrids
