Abstract

Physicochemical determination and dietary fiber content was conducted on three mango cultivars obtained from Sekinchan Selangor. The result of the study showed that Mangga Siam is the heaviest 310 g followed by Mangga Putih 241 g and Mangga Epal 190 g. Total soluble solids ranged from 13.0 - 14.5 Bricks with pH between 4.25 - 4.60 and percent titratable acidity of 0.18 - 0.32 gm/100 gm. The content of reducing sugars ranged from 3.20 - 4.20 g/100 g fresh weight. Mangga Siam contained the highest dietary fiber 3.56 g compared to Mangga Epal 2.75 g or Mangga Putih 2.20 g/100 g. In the selection of fruits women considered shape and colour of the fruits as important criteria. On the contrary men based their selection on the size of the fruit. Consumer preferred external attributes i.e. size shape and skin colour of Mangga Putih
