Abstract

The year of 1992 has shown clearly that Malaysia's Meat Poultry and Fish Industries have added value to their raw materials. This was not seen in the mid-80's when few and limited companies produced only burgers hotdogs and fishballs; and backyard cottage industries produced lap chong bak kwa and chicken/pork floss. Most of these value-added products VAP are of poor quality consumed locally and do not measure up to specifications for export. Today the broiler and fish-based industries have blended in sophisticated processing technologies coupled with the latest in composite restructured and formulated recipes to yield a tremendous variety of convenience food products well-packed to serve a wide variety of demanding customers. In addition large local processing plants have utilized efficient processing operations to minimize animal wastes and by-products and improving their functional and nutritional qualities to produce economical yet high quality value-added food products in Malaysia over the last 20 years
