Abstract

The performance of tumeric towards inhibiting lipid oxidation was evaluated in minced chicken meat stored in chilled and frozen storage. Treatment with tumeric extract at 400 ppm showed significant antioxidant activity AOA that resulted in no significant changes in the colour odour and taste of the meat. Minced chicken meat added with turmeric extract was studied for their physicochemical properties at chilled storage 3C for 9 days and frozen storage -18C for 2 months. The antioxidant effect was higher for turmeric extract added to minced meat compared to the control during storage. TBA value for control showed a significant increase in value during freezing and chilling storages. There were no significant differences in pH water activity L value a value and b value during storage. These results indicated that turmeric extract was an effective antioxidant in minced chicken meat stored in both chilled and frozen temperatures.
