Abstract

The importance of vicilin 7S-class globulin in the development of cocoa-specific flavour precursor during fermentation is well documented. However the information on the correlation between flavour and the concentration of this protein in the cocoa seed of various clones is still lacking. Perhaps the concentration was different between the various clones but how the differences might affect onto cocoa flavour is not known. Therefore Acetone dry powders AcDP were prepared from hand-pollinated cocoa beans. Then vicilin 7S-class globulin was extracted purified and quantified. The flavour of cocoa liquor of crosses was also evaluated in order to correlate the protein concentration with cocoa flavour.
