Abstract

There were 684 chickens involved in the study. Those chickens were picked up from three chicken houses which main body of houses were equal in size. The different of the raising enviroment was: 1. Broilers were raised in a wet pad and forced ventilation house WPFV. 2. Native black chickens were raised in a wet pad and forced ventilation house WPFV. The house installed three lines of vertical perches. 3. Native black chickens were raised in an open design house. The house also installed three lines of vertical perches. There was an exercise area on both sides of house. All the chickens were provided the same diet of feed. There were 180 chickens wear leg rings in each treatment from first day arrived. Each ring had a number on it. There were 144 chickens which did not wear leg rings selecting from three houses were sent to slaughter. The present results showed that the native chickens in open house had higher shear force than native chicken in WPFV and broilers in WPFV p less than 0.05. The male chickens had significantly bigger body weight than female. There was no significantly difference on water holding capacity between two sexes p greater than 0.05. The male meat always had higher shear force than female in both breast and thigh meat p less than 0.05.
