Abstract

Conventional breeding strategies have achieved great success in promoting the production efficiency with certain degree of sacrifice in meat quality in Taiwan's pig industry during the past three decades. Intramuscular fat IMF content is one of the major determinants of meat quality especially as it has influential impact on eating quality. The aim of this study is to examine the relationship of heart fatty acid-binding protein H-FABP gene and IMF content which are one of the meat quality indicators. Restriction fragment length polymorphism RFLP analysis of the H-FABP gene showed a. d and H alleles in MspI. HaeIII and HinfI respectively which were positively associated with high IMF content in Duroc pigs.
