Abstract
Phytase was induced from barley seeds by germination and its level was various during the germination periods. Phytase level in barley was increased up to 786 at 7days of germination in comparison with non-germination stage. Free-phosphate concentration increased steadily with germination time. Partial purified phytase had optimal activity at 55C and pH 5.0. Barley phytase was enhanced by a surfactant Tween-80 treatment. A phytase activity was higher with 0.1 treatment of Tween-80 than with 0.05 and 0.01. A phytase in grain feeds such as barley rice corn and soybean was efficiently hydrolyzed by barley phytase. Although furthur investigation on barley phytase function under the in vivo condition is required the current findings suggest that germination may improve nutrional value of phytate-rich grain feeds.
