Abstract

There are approximately 100 orchid species growing in Turkey. They include Orchis anatolica O. morio O. mascula O. laxiflora O. tridentata O. sancta Serapias vomeracea ssp. laxiflora S. vomeracea ssp. laxiflora S.vomeracea Ophrys reinholdii O. fusca Anacamptis pyramidalis and Dactylorhiza romana. All are terrestrial orchids and in general they are grown for their tuberous roots. Salep a nutritious drink obtained from tubers of various kinds of orchids has long been drunk in Turkey. In recent decades the rate of extinction of orchid species in Turkey has been alarmingly high. Therefore there is a growing nationwide interest in nature conservation and the obvious need to conserve and save orchid species from extinction. This paper reports on orchid genera and species which grow naturally in Turkey some chemical properties of their tubers and the conventional salep production process.
