Abstract

Coffee extract inhibit the growth of the bacteria on plate count agar plates containing extract of 0 to 10 g coffee per 100 ml but did not inhibited mould and yeast growth excepts Rhizopus oryzae. Growth of gram-negative bacteria Escherichia coli Salmonella typhi and Pseudomonas aeruginosa and gram-positive bacteria Staphyloccoccus aureus Bacillus cerecus Lactobacillus bulgaricus Streptococcus lactics and Streptoccocus faecalis was inhibited by different concentrations of coffee extract. Caffeine at different concentrations decreased the relative growth of L. bulgaricus E. coli S. typhi and S. faecalis. The bacterium most sensitive to coffee extract and caffeine was L. bulgaricus. Coffee extract also decreased the relative growth rate of microorganisms in pasteurised milk
