Abstract

Sesame seeds of 20 percent moisture content were artificially inoculated with Aspergillus flavus and Paecilomyces varitii and irradiated at 4 and 6 kGy then stored at ambient temperature. Within 4 weeks of storage unirradiated sesame seeds whether artificially inoculated or not became mouldy and had a dark colour and a musty rancid odour. Contamination by the fungi caused deterioration in germination rates seed quality and extracted oil properties. Irradiation at 6 kGy completely eliminated contamination by A.flavus and P.variottii and prevented deterioration in the seed quality and oil properties.
