Abstract
A three-level rotatable design was to determine optimum conditions for the extraction of banana juice. The effects of temperature (20-50C) pH (2.7-4.3) and enzyme concentration (0.13 percent - 0.47 percent) on the yield of banana juice were studied after 4 hours reaction time. A second order polynomial equation was used to calculate the yield (Y) from different combinations of temperature(X1) pH(X2) and enzyme concentration(X3). The predictive equation used was: Y 62.81 1.54X1 - 1.80X2 2.25X3 0.20X1X1 - 0.85X1X2 0.36X2X2 - 0.05X1X3 0.93X2X3 - 1.13X3X3. Using this equation 5 plots were generated and an optimum point obtained. The optimal conditions for the enzymatic extraction of banana juice were 0.42percent enzyme at 35C with a pH of 3.4
