Abstract
The importance of preserving the freshness of the raw material harvested is of vital importance in achieving long-term market success of aquaculture products. Freshness and raw material quality also determine the scope for value addition a vital aspect of modern day seafood marketing. However considering the land oriented nature of raw material another aspect which needs careful assessment is the safety of the product. Thus both quality and safety aspects have to be addressed in handling processing and marketing of aquaculture products.
