Abstract

Samples of eight barbecued and deep-fried animal by-product street foods were analysed for proximates vitamins minerals essential amino acids heavy metals antibiotic residues aflatoxins and pathogens. Animal studies were also carried out. The foods were high in protein and low in carbohydrated excepts for fish ball. All had high fat except for cow blood. Chicken head and intestine day-old chick pig intestine and fish ball promoted satisfactory growth and maintenance in rats. The poor nutritional value of chicken feet cow blood and pig ear can be attributed to their limiting amino acids: cystine-methionine or isoleucine. Penicillin was detected in pig ear. High levels of E. coli and coliforms were detected in chicken feet and intestine pig ear day-old chick and fish ball. Salmonella was positive in chicken head and intestine and in fish ball. The results indicate that when street foods are prepared and dispensed under good sanitary and hygienic conditions they can be good sources of nutrients.
