Abstract

The coconut is processed into a number of food products. The oil as a lauric oil has a sharp melting character making it very useful in confectionery products and other foods with a high fat content. Fresh coconut it widely used as a cookery ingredient wherever it is cultivated. Some examples of its use in savoury and sweet products are described
