Abstract

Fresh coconut water was concentrated in a plate-and-frame reverse osmosis equipment using cellulose acetate membranes at 2 3 and 4 MPa inlet pressure. Maximal concentrations of sugar sugar alcohol and protein for the retentate namely 6.5 1.9 and 0.2 respectively were obtained with 86 membranes whose total areas was 4.3 m2 at 3 or 4 MPa after 3 hours of reverse osmosis with continuous retentate recirculation. The concentration factor i.e. ratio of final to initial retentate concentration of total carbohydrate using 86 membranes was approximately 2.3-fold compared to that using 30 membranes with 1.5 m2 total membrane area. Reverse osmosis results were similar for deionized coconut water using 30 membranes and undeionized sample with 86 membranes. The results were discussed in terms of membrane fouling and polarization
