Abstract
Protein upgrading of orange peel waste was carried out by SSF using Aspergillus niger JB 1984 in a basal medium containing peel waste potasssium dihydrogen orthophosphate (KH2PO4) ammonium sulphate (NH4)2SO4) and molasses. After 72 hours incubation at 30 C the crude protein level of the substrate increased from 5 to 13. Protein quality of the fermented product was evaluated by Protein Efficiency Ratio (PER) Assay and a PER value of 0.78 (adjusted for casein: 2.5) was recorded. It appeared that low levels of amino acids were the major contributory factor to this low PER value. Total amino acid level measured 5.75 g per 100 g of fermented peel waste
