Abstract

Nutrient analysis of foods in the country has increased importance in recent years. This is partly due to the expanding food industry and the greater awareness of consumers on the nutritional composition of foods. The range of nutrients analysed have expanded and greater emphasis is given to quality of the food composition data. Reliable nutrient composition data in turn is dependent on the use of appropriate and accurate analytical techniques performanced by well-trained and conscientious laboratory technologists. Due to the highly variable and complex nature of foods no one single method can be expected to perform satisfactorily for all types of foods. For many nutrients there are several alternative analytical methods available. Various factors will have to be considered in choosing a suitable method for the required analysis. This paper discusses some analytical methods available for determination of the major nutrients. The principle behind each method is briefly discussed. Wherever possible experiences of this laboratory in these methods are described.
