Abstract
The use of retort pouch to pack food in Malaysia has lately generated much interest due to the several advantages it has over foods packed in metal cans. In the West it was noted that there has been an increasing use of institutional size retort pouches especially in the restaurant fast food and catering outlets as well as for institutional feeding as in hostels and hospitals. This trend has resulted in several local products being packed in pouches containing up to 1 kg although 3 kg pouches are currently available and their processing parameters determined.
