Abstract
Agriculture is an important sector in the economic and social development of northern Malaysia. The food processing industry is closely related to the production of local agricultural commodities. However it also depends on the conditions needs and taste of the consumers. For example processing of fishball and fishcake traditional food like tempe 'tempoyak' 'budu' and 'cencaluk' has not yet been accepted by local consumers and food processors.
