Abstract
Freeze drying can be used to produce instant 'nasi lemak' and 'sambal tumis bilis' which is easy to reconstitute and serve. Freeze-dried products are compact and light weight. Transportation and storage costs are lowered. They require no refrigeration and have long storage stability compared with fresh or frozen foods.
