Abstract

An analysis of 323 rice samples from the markets in Perlis Kedah Penang Perak Selangor Kelantan and Terengganu in 1987/88 was made. Quality criteria determined were those which are related with rice grading and cooking and eating quality. Only 8.7 percent of the samples met the grading specifications based on major grading factors such as percentages of head rice broken rice contrasting grains and damaged grains. Most samples had high amylose content ( 25 percent) which was reflected in the hard texture of the cooked rice.
