Abstract

Thaumatin structurally a mixture of closely-related sweet proteins is a naturally-occurring sweetener. The properties of the thaumatin sweetener such as sweetness intensity taste profile its solubility and stability are discussed. The practical use of thaumatin proteins in food and drink requires incorporating it with soluble bulking agents. Its potential use as a sweetening agent and flavour and aroma enhancer in food and drink are also discussed.
