Abstract

Immobilized-enzyme technology is gaining worldwide attention and its exploitation in the food industry is gradually increasing. Methods of immobilization include adsorption covalent binding cross linking and entrapment. Matrices used are polyamide phenol-formaldehyde resin cellulose dextrans agarose glass beads silica metal oxides and activated carbon.
