Abstract

The changes that take place during the development of cucumber ((Cucumis sativus L.)) grown hydroponically were studied following anthesis. Three phases of development could be observed : a shown rate of growth during the early stages followed by a rapid growth phase and finally a slowing down of development as fruits became old and mature. Growth was accompanied by an increase in fresh weight length and diameter and by a decrase in the pH total soluble solids and ascorbic acid content of the fruit. The moisture content titratable acidity and sugar content on the other hand increased with growth and peaked nine days after anthesis. No further changes were observed for the moisture content and titratable acidity thereafter but the sugar content began to decline slowly. The major sugars present in the fruits were fructose and glucose. Sucrose was absent in young fruits but was found in trace amounts in mature fruits.
