Abstract

The application of infrared spectroscopy using a rapid milk analyser (Milkoscan) for the study of grain legume protein solubility was investigated. Solubilities of chickpea fieldpea and soybean proteins obtained by both the Kjeldahl procedure and infrared spectroscopy were compared. Although the values obtained by the two methods differed at certain pHs ( pH3 and pH9) the Milkoscan still offers a rapid approach for the investigation of grain protein solubility
