Abstract

Quality changes in bighead carp kept whole at ambient temperature were monitored by measuring pH total volatile nitrogen (TVN) thiobarbituric acid reactive substances (TBARS) and sensory evaluation over 24 hr. The fatty acid profile of the white abdominal muscle was also noted. TVN and TBARS values had a high linear correlation with storage time. pH changes were insignificant throughout the experiment. The bighead carp was acceptable up to 12 hr storage. This corresponded to a TBARS value of 4.2 -0.5 umol malonaldehyde/kg and a TVN value of 5.32 mg N per 100g
